My cousin, fitness trainer/competitor, Nichole Cruz included the following recipe on her website, and I thought they looked simply delicious. She has a way of making healthy food look and taste so yummy and I can’t wait to try this recipe. I’ll have to substitute the chocolate chips for vegan chocolate chips, but I’m definitely trying this!

1c Cashews

  • 1/4 c Oats
  • 1 scoop Protein
  • 1/5 tbsp Honey
  • 1 tbsp Peanut butter
  • 1tsp Vanilla
  • 3 tbsp chocolate chips (optional)


Mix Cashews and oats in food processor (any blender will also do). Add remaining ingredients to the exception of chocolate chips. Mixture will become doughy. Add chocolate chips,  roll mixture into inch-sized balls and transfer to a plate.  Refrigerate or enjoy warm!
